I have to honest, I LOVE Rum, but normally I tend to think of it being a Caribbean drink. However, a new Rum manufactured in the Northern reaches of the Outer Hebrides in Scotland has just been launched and there’s not a pirate to be seen.

The Isle of Barra Distillers have created a dark rum that utilising the key botanical, carrageen seaweed, which the brand is famed for, hand-harvested from the shores of Barra. The carrageen is infused alongside coconut, cardamon, cloves, lemon and orange peel.
Its aroma hints of coconut and clove to start and finishes with a crisp maritime freshness. Flavour wise it is described as having a “coconut and brown sugar flavour with a clean and dry mouth feel, while the finish provides the complex warmth of cardamom.”
To promote the launch the team have created a Dark & Stormy Cocktail.

Dark & Stormy Cocktail
Method:
- Fill a low-ball glass with ice and 2/3 glass of ginger beer
- Shake 50ml measure of Island Dark Rum with 25ml sugar syrup and 25ml lime juice
- Double strain into the glass of ginger beer
- Garnish with a wedge of lime
