Recipe: Shortbread Rounds AKA Cats Claws

Some cookie recipes are so deliciously simple that even the most inexperienced baker like me can get results. This one from Guittard is perfect. We used half white chocolate chips and half milk chocolate chips in the cookies.

This recipe makes approx 8 cookies. Be careful you don’t overcook the biscuits as they will get firmer when they cool down.
Shortbread Rounds AKA Cats Claws

Ingredients
1 pack of butter (unsalted)
1/4 cup of sugar
2 cups of unsifted all-purpose flour
1 cup Guittard Milk Chocolate Chips
Half a pack of melted Guittard Cooking Chocolate

Preheat over to 350˚

Method
Cream butter & sugar in a large bowl with your fingers (or an electric mixer) until light.
Gradually add the flour until combined.
Stir in chips by hand. If dough seems dry or crumbly, it will stick together when shaped with your hands.
Using the palms of your hands, roll rounded teaspoonful of dough into 1-inch balls.
Place on uncreased baking paper and bake for 13-15 mins.
Cookies will still be pale.
Let stand for 2 minutes before removing from cookie sheet.
Allow to cool for a further 10mins.
Melt chocolate in the microwave or over boiling water on the stove and with a stencil or paintbrush apply your desired patttren (in our case cats claws) to the top of cookies.
